Τυροπιτάρια γκερμπεσιότικα Georgie the chef’s cheese pie
(the one you tasted at the newcomers’ meeting)

Ingredients
1 pack of fyllo for pies (choriatiko),
2 fresh courgettes grated and strained
1/2 a yellow pepper, grated.
1/2 a red pepper, finely chopped.
2 spring onions, chopped with their leaves.
1 1/2 spoon chopped fresh mint 250 grs. of chopped feta (a little spicy) , 4 spoons of xinomyzithra (soft white cheese), freshly ground peppersalt
The filling: Grate the courgettes, add a little salt and squeeze them well, to get rid of liquids. Chop all vegetables and put in a bowl. Add courgettes, spices, cheeses, and pepper. Add salt, if necessary. Sprinkle a little flour on the table and spread the fyllo. Cut each fyllo in 2 long stripes. Put the filling in the middle and roll over, to form a “snail”. Keep in fridge in a bowl covered with wax paper, sprinkled with flour. Bake in oven, after spreading olive oil on the surface. (200 degrees C for 30 mins.) or fry 3 mins. on each side.
